- 4 cdas pan rallado
- 1 cda lino molido
- 1 cda alga nori molida

- Para el panaché:
- 1/2 morrón rojo
- 1 zanahoria grande
- 1/2 hinojo
- 3 ramitas apio
- 1 cda aceite de coco para sofreír
- 1/4 cdita mostaza en grano
- 1/2 cdita sal marina
- 1 cdta azúcar mascabo
- Reducción para las albóndigas:
- 3 cdas aceite de oliva
- 1 cda azúcar mascabo
- 1 cda aceto balsámico
- 2 cdas salsa de soja

- Cocer la quinoa y cuando aún esté tibia mezclarla con el resto de los ingredientes y amalgamar hasta formar una pasta. Luego formar las bolitas con ambas manos.
- Colocar en un sartén con tapa (tipo essen) el aceite de coco y una vez caliente saltear allí todas las verduras cortadas chiquitas, excepto la zanahoria que se corta en láminas con la mandolina. Tapar, bajar el fuego y cocer por 5 min moviendo el sartén cada tanto.

- Ahora en otro sartén colocar el aceite de oliva (el indicado para la reducción) y una vez caliente colocar allí las albóndigas. Sofreirlas sarandeando el sartén en forma circular para que roten en ella cocinándolas por 3 o 4 minutos a fuego fuerte.
- Mezclar aparte el resto de ingredientes de la reducción y luego añadir esto al sartén con las albóndigas. Bajar al mínimo el fuego y sarandear e sartén tapado para que se impregne el reducto.
- Presentar el panaché en un plato precalentado para mantener la temperatura de las verduras.

- Y sobre estas colocar unas 5 o 6 albóndigas.
