- Albóndigas: en una sartén anti adherente, sofreímos en el aceite de oliva los ajos suavemente, baja temperatura, agregamos la paprika y el comino para saborizar el aceite, es rápido y dejamos enfriar. Esto va dentro de la carne, más la sal, la pimienta y el perejil. Amasamos y ahora la galleta adentro, amasamos un poco y hacer las bolas. Importante NO APRETAR LAS BOLAS, las albóndigas deben estar formadas, pero si las aprietas serán muy duras y apretadas, lo que le resta textura.
- Salsa: en una olla calentamos el aceite doramos cebollas y ajos y agregamos en secuencias, siempre revolviendo, el resto de los ingredientes tal cual los listé, importante darle un doradito a los vegetales y evita que se quemen de más o el fondo. De último los tomates y el caldo, corregir las sal y dar cocción 5 minutos. Es opcional una copa de vino tinto en este momento.
- Pasado los 5 minutos, adentro las albóndigas y cocinamos a fuego medio por 30 minutos. Evitar que el caldo se reduzca por debajo de las albóndigas, puedes corregir sobre la marcha con caldo de pollo, solo toma en cuenta que 15 minutos antes de apagar no debes agregar nada de líquidos, porque deshaces el sabor, y tendrías que dar 15 minutos más, lo cual puede sobre cocer los vegetales o la carne.
